Dann ungest\u00f6rt weiterkochen lassen, bis ein Sirup entstanden ist, von dem einige Tropfen, die man in Eiswasser fallen l\u00e4\u00dft, sofort zu einem Faden gelieren. Sofort anschlie\u00dfend Eigelb und Mehl in einer kleinen Sch\u00fcssel gut vermengen, 2 E\u00dfl\u00f6ffel hei\u00dfen Sirup dazuschlagen und diese Mischung langsam unter st\u00e4ndigem R\u00fchren zu dem Sirup in den Topf gie\u00dfen. Dann kommt die geriebene Kokosnu\u00df dazu, und es wird \u00fcber milder Hitze unentwegt ger\u00fchrt, bis eine sehr dicke, steife Masse entstanden ist. Sie darf w\u00e4hrenddessen auf keinen Fall kochen.<br \/>\nDen Topf vom Herd nehmen, Vanille-Extrakt hineinr\u00fchren und auf Zimmertemperatur<br \/>\nabk\u00fchlen lassen. Den Backofen auf fast 200\u00b0C vorheizen. Den Kokosnu\u00df-Teig e\u00dfl\u00f6ffelweise zwischen den Handfl\u00e4chen schnell zu B\u00e4llchen rollen. Diese B\u00e4llchen mit jeweils etwa 2 cm Abstand auf ein mit Butter bestrichenes Blech legen und in der Mitte des Ofens 15 Minuten backen. Sie sollen goldbraun werden.
