Die Hefe hineinbr\u00f6ckeln, das warme Wasser dar\u00fcber gie\u00dfen und die Hefe darin aufl\u00f6sen. Mit Zucker und etwas Mehl bestreuen, zugedeckt 15 Minuten gehen lassen. Anschlie\u00dfend die fl\u00fcssige Butter und Salz dazugeben, alles auf der   Arbeitsfl\u00e4che durchkneten, bis der Teig zusammenh\u00e4lt, aber nicht klebrig ist. Teel\u00f6ffelweise Wasser zugeben. Mit Mehl best\u00e4ubt zugedeckt zu doppeltem Volumen aufgehen lassen. Inzwischen die Zwiebeln sch\u00e4len und in d\u00fcnne Ringe schneiden. Das Butterschmalz in einer Pfanne zerlassen, die Zwiebeln darin bei milder Hitze d\u00fcnsten. Mit Salz, Pfeffer, Majoran w\u00fcrzen. Die \u00c4pfel vierteln, sch\u00e4len und entkernen, die Viertel in Spalten schneiden. Mit den noch warmen Zwiebeln mischen. Den Teig durchkneten, auf der leicht bemehlten Arbeitsfl\u00e4che ausrollen und eine mit \u00d6l gefettete Springform damit auskleiden. Die Zwiebelmischung darauf verteilen. Creme fraiche und das Ei verr\u00fchren und dar\u00fcber tr\u00e4ufeln, den Speck kleinw\u00fcrfeln und zusammen mit den Waln\u00fcssen aufstreuen.
