Soviel hei\u00dfe Milch und Butterfl\u00f6ckchen zugeben, dass ein cremiger Brei entsteht. Diesen mit Salz, Pfeffer und<br \/>\nMuskat abschmecken. Petersilienwurzel w\u00fcrfeln, Karotten in Scheiben schneiden. Das Gem\u00fcse in Salzwasser kurz blanchieren.<br \/>\nDas Fleisch in Butterschmalz anbraten, Zwiebeln, Knoblauch und blanchiertes Gem\u00fcse zugeben und anr\u00f6sten. Mit Mehl best\u00e4uben, mit Rotwein und Fond abl\u00f6schen und alles gut verr\u00fchren. Dann einige<br \/>\nMinuten kochen lassen. Mit Pfeffer und Salz abschmecken. Den Speck leicht anbraten. Das Ragout in eine Pieform f\u00fcllen. Mit Speck und gehackter Petersilie bestreuen. Darauf das Kartoffelp\u00fcree<br \/>\ngeben und glatt streichen. Nach Belieben Verzierungen in den Kartoffelbrei eindr\u00fccken.
