Innereien <br \/>\n\tBeifu&szlig; <br \/>\n\tfrischer Majoran <br \/>\n\tPfeffer <br \/>\n\tSalz <br \/>\n\tZwiebel, mittelgro&szlig; <br \/>\n\t100 g &nbsp;Sellerie <br \/>\n\t100 g &nbsp;M&ouml;hren <br \/>\n\t100 g &nbsp;Lauch <br \/>\n\t<em>F&uuml;llung<\/em>&nbsp;<br \/>\n\t50 g &nbsp;gerauchten Schweinebauch <br \/>\n\t50 g &nbsp;kleingehackte Zwiebeln <br \/>\n\t500 g &nbsp;Rosenkohl <br \/>\n\t&nbsp;500 g &nbsp;Maronen, gesch&auml;lt <br \/>\n\t80 g &nbsp;Zucker <br \/>\n\t0,1 l &nbsp;trockener Rotwein <br \/>\n\t0,1 l &nbsp;Bratensaft <br \/>\n\t2 cl Cognac <br \/>\n\t0,1 l &nbsp;Fleischbr&uuml;he <br \/>\n\t100 g &nbsp;G&auml;nseschmalz <br \/>\n\tR&ouml;mertopf<\/p>\n<p><strong>Zubereitung<\/strong><\/p>\n<p>&nbsp;<\/p>\n<p>Zwiebel, Sellerie, M&ouml;hren, Lauch w&uuml;rfeln. Maronen sch&auml;len, Zwiebeln kleinhacken, Schweinebauch fein w&uuml;rfeln. <br \/>\n\tGans vorbereiten: restliche Federn rupfen oder abflammen, Innereien entfernen, innen auswaschen und trockentupfen. Gans auf die Brust &nbsp;legen und die Karkasse (Knochengerippe) vorsichtig herausl&ouml;sen. Die Vorderfl&uuml;gel, Hals und B&uuml;rzel abschneiden. Das Fleisch mit Pfeffer, Salz, Majoran und Beifu&szlig; w&uuml;rzen. <\/p>\n<p><em>F&uuml;llung:<\/em> Kleingehackte Zwiebeln und Schweinebauch in G&auml;nseschmalz glasig anr&ouml;sten und mit Fleischbr&uuml;he abl&ouml;schen. Den gewaschenen Rosenkohl dazugeben und etwa zu einem Drittel garkochen (sollte noch richtig Biss <br \/>\n\thaben). Mit Salz, Pfeffer, Muskat w&uuml;rzen und erkalten lassen. Zucker in einer Kasserolle karamelisieren lassen, mit Rotwein abl&ouml;schen und Bratensaft dazugeben. Auf ein Drittel reduzieren lassen. Gesch&auml;lte Maronen und den Cognac dazugeben. Ca. 10 Minuten bei mittlerer Hitze glacieren lassen. <br \/>\n\tIn der Zwischenzeit die Lauch-, Sellerie- und M&ouml;hrenw&uuml;rfel in G&auml;nseschmalz anschwitzen. Die Gans mit der offenen Seite in einen R&ouml;mertopf legen oder einen feuerfesten B&auml;ckeoffe-Topf aus dem Elsass. Mit dem Rosenkohl und den glacierten Maronen f&uuml;llen. Zun&auml;hen, umdrehen, damit die Brust oben ist. Einen halben Liter kaltes Wasser, die Gem&uuml;sew&uuml;rfel, das gesamte G&auml;nseklein und eventuell die zerkleinerte Karkasse dazugeben. Mit Pfeffer und Salz w&uuml;rzen, Deckel darauf. In der Backr&ouml;hre bei 180 Grad ca. 2-2.5 Stunden braten. Eine halbe Stunde vor Ende der Bratenzeit Deckel herunternehmen und die Ofenklappe einen halben Zentimeter &ouml;ffnen, damit der Dunst abziehen und <br \/>\n\tdie &nbsp;G&auml;nsehaut knusprig werden kann. <br \/>\n\tDie Gans der L&auml;nge nach halbieren, F&uuml;llung als Beilage. <br \/>\n\tF&uuml;r die Sauce den Bratensaft mit Mondamin oder Kartoffelst&auml;rke leicht binden und mit Creme fraiche oder Honig und Rotwein verfeinern.&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Zutaten 1 frische Gans 3-3.5kg G&auml;nseklein u.
