Die Bohnen putzen, waschen und eventuell einmal durchschneiden, zugedeckt in wenig Salzwasser mit etwas Bohnenkraut bei schwacher Hitze etwa 15 Minuten d\u00fcnsten.<br \/>\n2. Die Bohnen abgie\u00dfen, abtropfen und abk\u00fchlen lassen.<br \/>\n3. Den Zitronensaft, die saure Sahne, den Jogurt und das K\u00fcrbiskern\u00f6l glatt r\u00fchren. Das Dressing mit Pfeffer und Salz abschmecken.<br \/>\n4. Die Petersilie verlesen, waschen, trockentupfen und fein hacken.<br \/>\n5. Die Bohnen auf zwei Tellern anrichten, mit dem Dressing betr\u00e4ufeln und mit der gehackten Petersilie und den K\u00fcrbiskernen bestreuen.<br \/>\n6. Das Roggenbrot mit der Gefl\u00fcgelwurst belegen und mit je einem Glas Apfelmost (\u00e0 200 ml) zum Bohnensalat servieren.<\/p>\n<p><em>Tip:<\/em><br \/>\n1. Das K\u00fcrbiskern\u00f6l ist eine Spezialit\u00e4t der Steiermark. Es sieht dunkelgr\u00fcn aus und hat einen nussigen, sehr intensiven Geschmack. K\u00fcrbiskern\u00f6l wird f\u00fcr Salate oder einfach als Brotaufstrich verwendet.<br \/>\n2. Gefl\u00fcgelwurst gibt es inzwischen in verschiedenen Sorten.
