Die Pfirsiche einschneiden, entkernen und das Fruchtfleisch in kleine St\u00fccke schneiden. Die Tomate ebenfalls h\u00e4uten, halbieren, entkernen, in kleine St\u00fccke schneiden und mit<br \/>\nden Pfirsichen vermengen.<br \/>\nDie Kr\u00e4uter [1] waschen, trocknen, fein hacken und mit dem Oliven\u00f6l (1) und Zitronensaft zu einer Kr\u00e4utervinaigrette verr\u00fchren. Dabei mit Salz, Pfeffer und Zucker abschmecken und die Vinaigrette \u00fcber den Tomaten-Pfirsich-Salat geben. Etwas ziehen lassen.<br \/>\nIn der Zwischenzeit fuer das Tatar das Fleisch erst in d\u00fcnne Scheiben, dann in Streifen und in sehr feine W\u00fcrfel schneiden. Zum Schluss nach Geschmack noch feiner verhacken. Das gehackte Fleisch mit etwas vom Oliven\u00f6l (2) &#8211; Menge nach Geschmack &#8211; Cayennepfeffer, grob geschrotetem Pfeffer und Meersalz anmachen.
