Dann in kaltes Wasser tauchen, h\u00e4uten und vom Stein l\u00f6sen. Grob zerteilen und mit dem Schneidestab des Handr\u00fchrers p\u00fcrieren. Die Gelatine in kaltem Wasser einweichen. Die Vanilleschote l\u00e4ngs aufschneiden, das Mark herauskratzen und mit Zucker und Eigelb schoen cremig mit den Schneebesen des Handr\u00fchrers aufschlagen (dauert etwa sechs bis acht Minuten). Die Gelatine in einem kleinen Topf bei milder Hitze aufl\u00f6sen. Quark, Pfirsichlikoer, Zitronensaft und Pfirsichp\u00fcree unter die Eimasse heben. Gelatine unterr\u00fchren und ungef\u00e4hr f\u00fcnfzehn Minuten kalt stellen, zwischendurch umr\u00fchren. Inzwischen Sahne und Eiweiss steif schlagen. Wenn die Masse zu gelieren beginnt, zuerst die Sahne, dann den Eischnee unterheben. Die Pfirsichcreme ein bis zwei Stunden oder \u00fcber Nacht zugedeckt kalt stellen. F\u00fcr die Sauce die Himbeeren mit Puderzucker und Zitronensaft sanft p\u00fcrieren und durch ein feines Sieb streichen. Die Himbeersauce zur Pfirsich-Quark-Creme servieren.
