Die Arbeitsfl\u00e4che leicht mit Salz bestreuen, die Scheiben nebeneinander darauf verteilen und die Oberfl\u00e4che salzen. Ca. 20 Minuten Wasser ziehen lassen, dann mit K\u00fcchenpapier von beiden Seiten trockentupfen. Die Scheiben in heissem Fett von jeder Seite 2 Minuten goldbraun backen, dann auf K\u00fcchenpapier abtropfen lassen. Jede Scheibe zuerst mit einer d\u00fcnnen Scheibe Parmaschinken, dann mit einem Basilikumblatt belegen und fest aufrollen. Den abgetropften Mozarella w\u00fcrfeln und mit Holzspiesschen auf die Auberginenr\u00f6llchen stecken. Tomaten 30 Sekunden blanchieren, dann h\u00e4uten, entkernen und w\u00fcrfeln, Zwiebeln pellen, w\u00fcrfeln und im Oliven\u00f6l bei milder Hitze 15 Minuten glasig d\u00fcnsten. Tomatenw\u00fcrfel dazugeben und alles bei mittlerer Hitze 30 Minuten einkochen lassen. Den Tomatensugo mit Tomatenmark, Zucker, Salz und Cayennpfeffer kr\u00e4ftig w\u00fcrzen. Auf eine Platte giessen und die Auberginenr\u00f6llchen daraufsetzen. Mit Basilikumbl\u00e4ttchen garnieren.
