Auf K\u00fcchenpapier auslegen und salzen. Die Auberginenscheiben nach 30 Minuten mit K\u00fcchenpapier abtupfen.<br \/>\nDas Oliven\u00f6l portionsweise in zwei grosse Pfannen erhitzen und die Auberginenscheiben auf beiden Seiten etwa vier Minuten darin braten, dann auf K\u00fcchenpapier abtropfen lassen.<br \/>\nRand und Boden der Springform mit Backtrennpapier auslegen. Den Boden mit Auberginenscheiben belegen und ebenso viele Scheiben zum Abdecken beiseite legen. Die restlichen Auberginen mit Zitronensaft, abgezupften Thymianbl\u00e4ttern (eineige zum Garnieren beiseite legen), Eiern und Creme fraiche im K\u00fcchenmixer p\u00fcrieren. Mit Salz, Pfeffer und Muskat w\u00fcrzen. Die Masse in die Sprinform f\u00fcllen und mit den restlichen Auberginenscheiben bedecken. Im vorgeheizten Backofen bei 200 Grad auf der zweiten Einschubleiste von unten 30 Minuten backen.<br \/>\nDen Kuchen auf einem Rost etwas abk\u00fclen lassen. Dann auf einer runden Platte mit etwas Tomatensauce anrichten und mit Thymianbl\u00e4ttern garnieren. Kalt oder warm mit Tomatensauce servieren.<br \/>\nF\u00fcr die Tomatensauce die Stielans\u00e4tze keilf\u00f6rmig aus den Tomaten schneiden. Die Tomaten kurz in kochende Waser geben, dann abschrecken, h\u00e4uten, vierteln und entkernen, das Fleisch in kleine W\u00fcrfel schneiden. Die Zwiebel pellen und fein w\u00fcrfeln, den Knoblauch pellen und durchpressen.<br \/>\nDas Oliven\u00f6l in einem Topf erhitzen. Zwiebelw\u00fcrfel und durchgepressten Knoblauch darin glasig d\u00fcnsten. Mit Weisswein abl\u00f6schen und etwas einkochen. Die Tomatenw\u00fcrfel dazugeben und bei mittlerer Hitze dicklich einkochen. Mit Salz, Cayennepfeffer und Zucker w\u00fcrzen.
