Boskop)<br \/>\n<em>Grie\u00dfmasse<\/em><br \/>\n1\/2 l Milch<br \/>\n50 g Grie\u00df<br \/>\n2 EL gehackte Mandeln<br \/>\n50 g Zucker<br \/>\n1 Eigelb   (Eiwei\u00df f\u00fcr die Grie\u00dfmasse (Eischnee) aufheben)<br \/>\n<em>M\u00fcslimasse<\/em><br \/>\nSaft von 1 Zitrone<br \/>\nje 1 EL Rosinen, Korinthen, gehackte Mandeln<br \/>\n1 TL Zimt<br \/>\n1 TL Zucker<br \/>\netwas Rum<br \/>\n<em>Streusel<\/em><br \/>\n100 g Margarine oder Butter<br \/>\n150 g Zucker<br \/>\n1\/2 Teel\u00f6ffel Zimt<br \/>\n1 P\u00e4ckchen Vanillinzucker<br \/>\n1 Teel\u00f6ffel Backpulver<br \/>\n100 (150) g Mehl<\/p>\n<p><strong>Zubereitung<\/strong><br \/>\nAlle Zutaten f\u00fcr die M\u00fcslimasse mischen und ziehen lassen. Aus den Zutaten einen R\u00fchrteig bereiten. Alle trockenen Zutaten, dann das Fett &#8211; es muss streichf\u00e4hig sein -, die Eier und alle \u00fcbrigen Zutaten in die R\u00fchrsch\u00fcssel geben. Mit dem R\u00fchrbesen zuerst alles auf der niedrigsten, dann auf der h\u00f6chsten Einstellung etwa 2 Minuten verr\u00fchren. R\u00fchrsch\u00fcssel dabei auch schr\u00e4g halten. Zwischendurch das Ger\u00e4t abschalten und mit einem Spachtel den Teig vom Sch\u00fcsselrand und -boden l\u00f6sen. Der Teig ist fertig, wenn er eine cremig-sahnige Beschaffenheit hat. Springform (26 cm Durchmesser) fetten, mit Semmelbr\u00f6sel ausstreuen. Auf den Teig evtl. Obstkuchen-Oblaten legen (gegen Durchweichen). \u00c4pfel in d\u00fcnne Scheiben schneiden. F\u00fcr die Grie\u00dfmasse Milch zum Kochen bringen. Grie\u00df, Mandeln, Zucker einstreuen, kurz quellen lassen. Dann Eigelb unterr\u00fchren und Steifgeschlagenen Eischnee unterziehen. &#8211; (M\u00fcslimasse) &#8211; Die Zutaten f\u00fcr die Streusel miteinander vermengen: Fett schaumig r\u00fchren, nach und nach Zucker, Zimt, Vanillezucker, Salz zugeben. 2\/3 mit Backpulver gemischtes Mehl essl\u00f6ffelweise unterr\u00fchren. Den Rest des Mehles zugeben und mit den H\u00e4nden unterarbeiten, bis eine kr\u00fcmelige Masse entsteht. Die H\u00e4lfte der \u00c4pfel auf den Teig geben. Darauf die Grie\u00dfmasse verteilen. Dar\u00fcber die restlichen \u00c4pfel, die M\u00fcslimasse und die Streusel geben. Im Vorgeheizten Backofen bei 165 (175) Grad ca. 90 Min. backen. Evtl. mit Pergament-(Butterbrot)-papier oder Alufolie (gl\u00e4nzende Seite nach oben) abdecken, sollten die Streusel schon eher braun sein.<br \/>\nEinfrieren: Ausgek\u00fchlt in Alufolie verpacken und Beschriften.<br \/>\nTipps und Tricks: &#8211; Eischnee wird besser steif bleiben, wenn man eine Prise Salz hinzutut. &#8211; Ein Guss aus Puderzucker mit Zitronensaft, Rum oder Eiwei\u00df trocknet schneller, wenn er auf das noch etwas warme Geb\u00e4ck aufgetragen wird. &#8211; Kuchen lauwarm verpackt und nach dem Ausk\u00fchlen eingefroren, dann schmeckt es nach dem Auftauen wie frisch gebacken. &#8211; Kuchen (Torten), die mit einem \u00dcberzug aus Schokolade, Zuckerguss oder Marzipan eingefroren wurden, sollten in der Verpackung oder auf einer Tortenplatte mit Abdeckhaube aufgetaut werden.
