In der warmen Butter (1) hellgelb d\u00fcnsten. Den Reis beif\u00fcgen und kurz mitr\u00f6sten. Den Apfelwein dazugiessen. Unter h\u00e4ufigem R\u00fchren vollst\u00e4ndig vom Reis aufnehmen lassen.<br \/>\nNun die Gem\u00fcsebouillon beif\u00fcgen. Die H\u00e4lfte des Rosmarins fein hacken und dem Reis beif\u00fcgen. Diesen noch so lange kochen lassen, bis er bissfest ist.<br \/>\nDen K\u00e4se w\u00fcrfeln. Die H\u00e4lfte davon unter den Fertigen Risotto mischen, mit Salz und Pfeffer abschmecken und zugedeckt neben der Herdplatte 5 Minuten nachgaren lassen.<br \/>\nDie \u00c4pfel ungesch\u00e4lt vierteln, das Kerngeh\u00e4use entfernen und die Fr\u00fcchte in Schnitze schneiden. In der Butter (2) zusammen mit den restlichen Rosmarinnadeln kurz braten.
