In die Mitte eine Mulde dr\u00fccken. Ei, Zucker und Vanillinzucker hinzugeben. Kaltes Fett in Fl\u00f6ckchen darauf verteilen. Alle Zutaten rasch zu einem Teig verkneten. In Folie wickeln und 30 Minuten im K\u00fchlschrank ruhen lassen. Pie- oder Tortenform (26 cm Durchmesser) fetten. M\u00fcrbeteig auf leicht bemehlter Fl\u00e4che rund ausrollen und die Form damit auslegen. Teigboden mehrmals mit einer Gabel anstechen. Im Vorgeheizten Backofen (200 Grad) ca. 15 Minuten vorbacken. Inzwischen Ananas abtropfen lassen. Zitronenschale, Cr\u00e8me fra\u00eeche, Zucker, Vanillinzucker, Eigelb und Speisest\u00e4rke verr\u00fchren. Creme auf dem Vorgebackenen Tortenboden verstreichen. Ananasringe halbieren und f\u00e4cherartig auf die Creme legen. Bei gleicher Temperatur noch ca. 30-35 Minuten backen. Ananaskonfit\u00fcre erw\u00e4rmen, durch ein Sieb streichen und den warmen Kuchen damit glasieren. Auf einem Kuchengitter ausk\u00fchlen lassen. Vor dem Servieren mit Puderzucker best\u00e4uben.
