{"id":2249,"date":"2011-07-26T19:00:35","date_gmt":"2011-07-26T19:00:35","guid":{"rendered":"https:\/\/wissen.science-and-fun.de\/kochen\/?p=2249"},"modified":"2011-07-26T19:00:35","modified_gmt":"2011-07-26T19:00:35","slug":"gratinierte-birnen-mit-kakaonudeln-und-gorgonzolasauce","status":"publish","type":"post","link":"https:\/\/wissen.science-and-fun.de\/kochen\/2011\/07\/26\/gratinierte-birnen-mit-kakaonudeln-und-gorgonzolasauce\/","title":{"rendered":"Gratinierte Birnen mit Kakaonudeln und Gorgonzolasauce"},"content":{"rendered":"<p><strong>Zutaten<\/strong><br \/>\n2 Birnen mit Stiel nicht zu reif [1]<br \/>\n2 EL Butter, fl\u00fcssig<br \/>\n1 EL Butter<br \/>\n1\/2 EL Kakaopulver<br \/>\nZucker<br \/>\nPuderzucker<br \/>\n<em>Sauce<\/em><br \/>\n50 g  Gorgonzola<br \/>\n150 ml Gemuesebruehe<br \/>\n60 ml Sahne<br \/>\nSchwarzer Pfeffer<br \/>\n<em>Teig<\/em><br \/>\n200 g  Mehl<br \/>\n2 EL Kakaopulver<br \/>\n1 Ei<br \/>\n1 TL Speiseoel<br \/>\n1 Prise Salz<br \/>\n50 ml Wasser (Menge anpassen!)<\/p>\n<p><strong>Zubereitung<\/strong><br \/>\n<em>Nudeln:<\/em> Mehl, Kakao, Ei, \u00d6l, Salz und Wasser (Menge anpassen!) zu einem glatten Teig verkneten. Diesen ca. dreissig Minuten mit Frischhaltefolie abgedeckt ruhen lassen. Anschliessend mit einer Nudelmaschine den Teig duenn ausrollen und in 1cm breite Nudeln schneiden.<br \/>\n<em>Sauce:<\/em> Gorgonzola w\u00fcrfeln. Br\u00fche und Sahne in einen Topf geben und aufkochen. K\u00e4sew\u00fcrfel zugeben, schmelzen lassen und die Sauce glatt r\u00fchren. Mit schwarzem Pfeffer abschmecken.<br \/>\n<em>Birnen:<\/em> Die Birnen sch\u00e4len, l\u00e4ngs halbieren [2] und mit einem kleinen Kugelausstecher entkernen. In einem Topf mit Zuckerwasser die Birnen pochieren. Herausnehmen und gut abtropfen lassen. Birnenh\u00e4lften f\u00e4cherf\u00f6rmig einschneiden, auf ein mit Backpapier ausgelegtes Backblech legen. Die Birnenh\u00e4lften mit fl\u00fcssiger Butter bepinseln und mit Puderzucker bestreuen. Im Backofen unter der Grillschlange oder bei starker Oberhitze den Zucker auf den Birnen goldbraun schmelzen lassen. In der Zwischenzeit die Nudeln in kochendem Salzwasser bissfest kochen, absch\u00fctten und abschrecken. In einer Pfanne mit Butter die Nudeln warm anschwenken, auf Tellern anrichten, mit Kakao leicht best\u00e4uben, die Sauce halb \u00fcber die Nudeln giessen und die Birnen dazu geben.<br \/>\n[1] Nicht zu reif, damit die Birnen nicht zu weich, und vor allem auch nicht zu s\u00fcss sind: passt dann besser zum Gorgonzola!<br \/>\n[2] Dabei darauf achten, dass die Stielh\u00e4lften noch dranbleiben,<br \/>\nalso mit einem sehr scharfen Messer, und vorsichtig arbeiten!
