Mozzarella in ca. 1\/2 cm dicke Scheiben schneiden, Basilikumbl\u00e4tter von den Stielen zupfen.<br \/>\n2. Kalbsschnitzel zwischen zwei Lagen Frischhaltefolie behutsam klopfen, beidseitig salzen und pfeffern. Die Schnitzel mit Osso Collo, Mozarella und Basilikumbl\u00e4ttern belegen, einrollen und mit Zahnstochern fixieren. Backrohr auf ca. 90\u00b0 C vorheizen.<br \/>\n3. In einer Pfanne 3-4 El \u00d6l erhitzen, Rouladen darin rasch anbraten, unter \u00f6fterem Wenden 12-15 Minuten braten, dabei immer wieder mit Bratfett \u00fcbergie\u00dfen.<br \/>\n4. Rouladen aus der Pfanne nehmen, zum Warmhalten ins Rohr stellen. Bratfett abgie\u00dfen. Bratr\u00fcckstand mit Marsala abl\u00f6schen , Wein einkochen. Mit Suppe aufgie\u00dfen und aufkochen. Saft durch einr\u00fchren von 2 El kalter Butterst\u00fcckchen  binden, die Sauce darf jetzt nicht mehr kochen!<br \/>\n5. Zahnstocher entfernen, Rouladen in Scheiben schneiden, mit Sauce und Safranrisotto servieren.<br \/>\n6. Risotto: Safran in hei\u00dfer Suppe aufl\u00f6sen. Zwiebel in Oliven\u00f6l anschwitzen, Reis dazugeben und glasig anschwitzen. Mit Schu\u00df Wei\u00dfwein und einem Drittel der Suppe abl\u00f6schen. Reis unter st\u00e4ndigem R\u00fchren bi\u00dffest k\u00f6cheln, dabei nach und nach die restliche Suppe zugie\u00dfen, abschmecken.
