Die Schnitzeln salzen und beidseitig mit Mehl best\u00e4uben. Schnitzel beidseitig kurz in der Butter anbraten, mit Wein aufgie\u00dfen. Das Fleisch einige Zeit in der Sauce ziehen lassen. Schnitzel aus der Pfanne nehmen und warm stellen. Die Sauce mit gehacktem Knoblauch und Kr\u00e4utern abschmecken. Jungzwiebel und Karotten putzen bzw. sch\u00e4len und fein schneiden. In die Sauce geben und einige Minuten darin garen. Zum Schluss die Sauce mit Sahne aufgie\u00dfen und noch etwas einkochen lassen. Trauben abzupfen und halbieren. Cognac in einer Pfanne erhitzen, die halbierten Trauben zugeben, mit Zucker abschmecken. Die so entstandene Sauce mit etwas kalter Butter montieren. Trauben mit dem Reis vermischen.
