In einer Pfanne im hei\u00dfen Butterschmalz ca 8 Min rundum braten. Die Schnitzel herausnehmen und warm stellen. Dabei mit Alufolie abdecken, damit sie nicht austrocknen. Zwiebeln und Zucker im Bratfond karamelisieren lassen. Wenn der Zucker vollst\u00e4ndig aufgel\u00f6st ist. Cidre angie\u00dfen und ca 5 Min bei milder Hitze k\u00f6cheln. Inzwischen \u00c4pfel waschen, sch\u00e4len, halbieren und Kerngeh\u00e4use entfernen. \u00c4pfel in Spalten schneide, it den Kr\u00e4utern und Calvados in den Cidrefond geben und ca 5 Min k\u00f6cheln lassen. 1\/3 von den \u00c4pfeln aus der Pfanne nehmen, restl mit dem Fond p\u00fcrieren. Fond erneut aufkochen, mit Salz und Pfeffer abschmecken.
