Wein angie\u00dfen und einkochen lassen. Dann M\u00f6hren, Sellerie und Pilze zugeben. Abschmecken, den Fond angie\u00dfen und ebenfalls stark einkochen lassen. Sahne, Sauerrahm, Senf, Zitronenschale und Estragon unterr\u00fchren. Die Sauce ca 6 Minuten k\u00f6cheln lassen. Das Fleisch in acht Scheiben schneiden und zwischen zwei Lagen Frischhaltefolie flach klopfen. Mit Salz, Pfeffer und Zitronenpfeffer w\u00fcrzen. Dann in der hei\u00dfen Kr\u00e4uterbutter von beiden Seiten ca 5 Min braten.
