Von beiden Seiten salzen und pfeffern. Toastbrot entrinden, mit den Steinpilzen (Die getrocknete Steinpilze m\u00fcssen sehr trocken sein, evtl. kurz nachtrocknen.) und der Petersilie in eine Moulinette geben und fein mahlen. Die<br \/>\nBrot-Pilz-Petersilien-Mischung auf einen Teller geben, verschlagenes Ei und Mehl auf einen anderen.<br \/>\nDas Schnitzel zuerst in Mehl, dann in verschlagenem Ei, dann in der Panierung wenden, \u00fcbersch\u00fcssige Panierung abklopfen. \u00d6l in der Pfanne bei milder Hitze warm, aber nicht heiss werden lassen und das Schnitzel darin von jeder Seite f\u00fcnf Minuten bei milder Hitze<br \/>\ngoldbraun braten.<br \/>\nDazu passt z.B.
