Dann nach und nach alle anderen Zutaten dazugeben. Alles so lange durchkneten, bis ein gleichm\u00e4ssiger Teig entsteht. Etwa ein bis zwei Stunden k\u00fchl stellen, danach d\u00fcnn ausrollen und auf ein mit Backpapier bezogenes Blech legen. Quitten in Achtel schneiden, sch\u00e4len und das Kerngeh\u00e4use entfernen. In dem Weisswein mit Zucker und Zimt blanchieren. Die St\u00fccke d\u00fcrfen nicht zu weich sein. Den Saft jetzt absch\u00fctten und alles abk\u00fchlen lassen. In der Zwischenzeit den Quark und die \u00fcbrigen Zutaten verr\u00fchren, dann die Quitten in St\u00fcckchen schneiden, mit der Quarkmasse verr\u00fchren und auf den Boden geben.
