Saft)<br \/>\n<em>Dekoration<\/em><br \/>\n300 g  Mandeln, gehobelt<br \/>\n1 EL (-2) Butter<br \/>\n120 g  Zucker, ca. <\/p>\n<p><strong>Zubereitung<\/strong><br \/>\nZuerst die Mandeln r\u00f6sten, denn sie brauchen lange, bis sie ausgek\u00fchlt sind. Daf\u00fcr die Butter in einer grossen Pfanne schmelzen (am besten in einer beschichteten) und die H\u00e4lfte des Zuckers dazugiessen. Die Mandeln darauf geben und den restlichen Zucker auf den Mandeln verteilen. Die Mandeln bei mittlerer bis starker Hitze unter st\u00e4ndigem R\u00fchren br\u00e4unen. Wenn sie gen\u00fcgend Farbe angenommen haben, die gebr\u00e4unten Mandeln sofort auf einen kalten gebutterten Teller umf\u00fcllen, damit sie nicht verbrennen (wenn man den Teller nicht einfettet, bleiben die Mandeln daran kleben).<br \/>\nF\u00fcr den Biskuit die Eier mit Zucker und Vanillinzucker so lange r\u00fchren, bis eine cremige, weissliche Masse entstanden ist. Das Mehl mit Speisest\u00e4rke und Backpulver vermischen, dar\u00fcber sieben und mit einem Schneebesen vorsichtig unterheben. Den Backofen auf 200 Grad Ober- und Unterhitze vorheizen. Den Boden einer Springform (28 cm Durchmesser) mit Backpapier auslegen und den Teig in die Form giessen. Ca. 25 bis 30 Minuten backen, anschliessend das Backpapier<br \/>\nabziehen und den Biskuit auf einem Tortengitter ausk\u00fchlen lassen. Danach den Tortenboden zweimal durchschneiden, so dass drei etwa gleich dicke Lagen entstehen.<br \/>\nDie Pfirsiche in einem Sieb gut abtropfen lassen (den Saft anderweitig verwenden) und dann in Spalten schneiden. Die Sahne mit dem Vanillinzucker und dem Sahnefestiger steif schlagen. Die unterste Biskuitlage d\u00fcnn mit Sahne bestreichen und die H\u00e4lfte der Pfirsichspalten gleichm\u00e4ssig darauf verteilen. Wenig Sahne (ca. 4-5 EL) dar\u00fcber streichen und den zweiten Boden auflegen. Dann ebenso verfahren wie mit dem ersten Boden. Zum Schluss den oberste Boden darauf setzen und die Torte oben und an den Seiten gleichm\u00e4ssig mit Sahne einstreichen. Die gebr\u00e4unten und inzwischen erkalteten Mandeln auf die Oberfl\u00e4che schichten.
