W\u00e4hrendessen die \u00c4pfel sch\u00e4len, vierteln und in d\u00fcnne Scheiben schneiden, so, wie Sie es vom Apfelkuchen kennen. Mit Zitronensaft betr\u00e4ufeln, damit die Apfelst\u00fccke nicht braun werden. Die Mandeln in einer Pfanne oder unter dem Grill leicht br\u00e4unen und die Blutwurst in ungef\u00e4hr einen halben Zentimeter dicke Scheiben schneiden. Den Backofen auf 180 Grad vorheizen. Die fertigen Kartoffeln absch\u00fctten, einen Moment ausd\u00e4mpfen lassen und mit der Kartoffelpresse zu P\u00fcree verarbeiten. Die Eier trennen und das Eiwei\u00df aufschlagen. Eigelb, ger\u00f6stete Mandeln, die H\u00e4lfte der Semmelbr\u00f6sel und einen Essl\u00f6ffel Butter unter das P\u00fcree r\u00fchren. Dann w\u00fcrzen Sie es mit geriebener Muskatnuss und einigen frischen Thymianbl\u00e4ttchen (ansonsten mit getrockneten Kr\u00e4utern). Das Ganze salzen und mit der gehackten Chilischote abrunden. Wer es sch\u00e4rfer liebt, nimmt zwei Schoten, wem dies alles zu feurig vorkommt, l\u00e4sst die Chilis einfach weg. Es schmeckt trotzdem lecker. Zum Schluss heben Sie das geschlagene Eiwei\u00df unter das P\u00fcree. Mit der restlichen Butter fetten Sie eine flache Auflaufform, die dann mit dem \u00fcbrigen Paniermehl ausgestreut wird. Das Kartoffelp\u00fcree wie einen Kuchenteig flach und gleichm\u00e4\u00dfig in die Form hineinstreichen. Dachziegelartig mit den Apfelscheiben belegen und etwas Honig auf die \u00c4pfel tr\u00e4ufeln. Im hei\u00dfen Ofen etwa 20 Minuten lang backen. Aus dem Ofen nehmen und Blutwurst, restlichen Thymian und Speckstreifen dekorativ auf der Apfelschicht verteilen.
