Abschrecken, sch\u00e4len und abk\u00fchlen lassen. In etwa einen halben Zentimeter dicke Scheiben schneiden. K\u00e4se mit Quark und Essig zu einer geschmeidgen Creme verr\u00fchren. K\u00fcrbiskerne grob hacken und unterr\u00fchren. Jeweils zwei Rote Beete-Scheiben mit K\u00e4secreme f\u00fcllen und leicht zusammendr\u00fccken. Im Mehl, dann in den verquirlten Eiern und in zerbr\u00f6selten Vollkornweizenflakes wenden. \u00d6l und Butter in einer gro\u00dfen Pfanne erhitzzen, die gef\u00fcllten Gem\u00fcsescheiben darin von jeder Seite etwa drei bis vier Minuten bei mittlerer Hitze goldbraun backen. F\u00fcr die Sauce saure Sahne, Aprikosenkonfit\u00fcre, Ingwer und Zitronenschale   ver\u00fchren und mit Gew\u00fcrzen pikant abschmecken. Aprikosen in kleine W\u00fcrfel schneiden und untermischen. Mindestens 15 Minuten durchziehen lassen und kurz vor dem Servieren Schlagsahne locker unterziehen.<br \/>\nDazu passen Salzkartoffeln und Endiviensalat.
