Die Paprikaschoten auf ein ge\u00f6ltes Backblech legen und so lange im Ofen grillen, bis die Haut schwarz ist. Die Tomaten \u00fcberbr\u00fchen, h\u00e4uten und mit einer Gabel zerdr\u00fccken, Zucker dazugeben. Die Haut von den Paprikaschoten abziehen; Kerne und Stielenden entfernen und die Schoten der Laenge nach in d\u00fcnne Streifen schneiden.<br \/>\nOlivenoel in einer Pfanne erhitzen, Zwiebel, Tomaten und Paprika anbraten und zum Schluss die Sardellenfilets hineingeben. Eine Pfanne mit einer aufgeschnittenen Knoblauchzehe einreiben und mit Schmalz einfetten. Die Eier in eine Sch\u00fcssel geben, mit dem Schneebesen schlagen, salzen und das Gem\u00fcse mit den Eiern verr\u00fchren. Die Eimasse in die Knoblauch-Pfanne geben und auf kleiner Flamme stocken lassen. Dabei immer wieder an der Pfanne r\u00fctteln. Mit einem<br \/>\nPfannenwender &#8211; falls n\u00f6tig &#8211; die Tortilla vorsichtig vom Rand l\u00f6sen. Die Pfanne mit einem flachen Teller bedecken, Pfanne und Teller fest zusammenhalten und umdrehen. Die halbfertige Tortilla liegt jetzt auf dem Teller. Die Pfanne erneut mit Knoblauch einreiben und mit Schmalz einfetten.
