Gelatine in kaltem Wasser einweichen, dann ausdr\u00fccken. Sahne steif schlagen. Milch, Vanilleschote und Zucker aufkochen.<br \/>\nVanilleschote herausnehmen, Grie\u00df einlaufen lassen und glatt r\u00fchren. In eine Sch\u00fcssel umf\u00fcllen und k\u00fchl r\u00fchren. Eigelb und Gelatine unterheben. Quark einr\u00fchren, geschlagene Sahne unterheben und Blaubeeren einmengen. Das Ganze in ein ausgesp\u00fcltes Puddingf\u00f6rmchen abf\u00fcllen und \u00fcber Nacht k\u00fchl stellen. Aprikosen entsteinen und achteln. Mandeln leicht anr\u00f6sten. Himbeeren mixen und durch ein feines Sieb streichen. Pistazien grob hacken.<br \/>\nAprikosen in L\u00e4uterzucker mit etwas Wei\u00dfwein kurz aufkochen. Pistazien und Mandeln dazugeben, abk\u00fchlen lassen. F\u00f6rmchen kurz in hei\u00dfes Wasser halten, Quarkt\u00f6rtchen st\u00fcrzen, halbieren und eine H\u00e4lfte in Ecken aufschneiden.<br \/>\nAprikosenkompott als Spiegel auf einem flachen Teller
