Orangenschale mit einem scharfen Messer von der Orange l\u00f6sen (ohne wei\u00dfe Haut) und in feine Streifen schneiden.<br \/>\nIn heissem Wasser in einem Sieb kurz blanchieren &#8211; mit dem Saft und Zucker zu den Erdbeeren geben. Minze fein hacken und auch dazugeben. Erdbeeren so mindestens 1 Stunde marinieren lassen.<br \/>\nSahne mit einer ausgekratzten Vanillestange leicht aufkochen lassen &#8211; Stange mitkochen.<br \/>\nEigelb mit Zucker \u00fcber einem Wasserbad schaumig r\u00fchren.
