Spargel sch\u00e4len und in gleich lange St\u00fccke schneiden. Die Br\u00fche mit etwas Zucker zum Kochen bringen und die Spargelst\u00fccke darin 10 bis15 Minuten garen. Abtropfen lassen. Putenbrustfilet in heissem Butterschmalz von jeder Seite 6 bis 7 Minuten braten, salzen, pfeffern.<br \/>\n2. Fr\u00fchlingszwiebeln putzen, waschen und in Ringe schneiden. Im Spargelsud 3 Minuten ziehen lassen.<br \/>\n3. Spinat putzen und waschen, dicke Mittelrippen, wenn n\u00f6tig, abl\u00f6sen. Putenfleisch in Streifen schneiden und mit Spargel, Zwiebeln und Spinat in einer Sch\u00fcssel mischen.<br \/>\n4. Schnittlauch in Roellchen schneiden und mit der Mayonnaise verr\u00fchren. Sahne halbsteif schlagen, unterheben und mit Salz, Pfeffer, Zitronensaft und Zucker abschmecken.<br \/>\n5.
