Dill und Petersilie)<br \/>\n1 Prise Zucker <\/p>\n<p><strong>Zubereitung<\/strong><br \/>\n1. Mehl, Milch und 4 El Wasser gut miteinander verr\u00fchren. Dann die Eier<br \/>\nzuf\u00fcgen. 30 g Fett zerlassen und mit den Kr\u00e4utern unterziehen. Mit Salz und<br \/>\nMuskat w\u00fcrzen.<br \/>\n2. Den Teig 30 Minuten zum Aufquellen k\u00fchl stellen. Er soll die Konsistenz von fl\u00fcssiger Sahne haben. Eventuell vor dem Abbacken teel\u00f6ffelweise kaltes Wasser unterschlagen.<br \/>\n3. Spargel sch\u00e4len. In einem grossen Topf Wasser mit Salz, Zucker und 10 g Fett aufkochen. Spargel hineingeben. Zugedeckt 15-20 Minuten garen.<br \/>\n4. In einer kleinen Pfanne (15 bis 20 cm Durchmesser) nacheinander 8-10 d\u00fcnne Eierkuchen backen. Daf\u00fcr jeweils einen Teel\u00f6ffel des restlichen Fettes in der heissen Pfanne erhitzen und eine kleine Sch\u00f6pfkelle Teig hineingeben. Eierkuchen von jeder Seite 1 Minute backen. Im Backofen zugedeckt warm halten.<br \/>\n5. Spargel aus dem Wasser heben. Abtropfen lassen.
