In etwas hei\u00dfem Oliven\u00f6l kurz ansautieren und abk\u00fchlen lassen.<br \/>\nSaiblingsfilet mit Zitronensaft betr\u00e4ufeln, mit Meersalz w\u00fcrzen und mit Chili\u00f6l antr\u00e4ufeln. Etwas marinieren lassen.<br \/>\nWei\u00dfen Spargel von oben nach unten sch\u00e4len, gr\u00fcnen Spargel von der Mitte nach unten sch\u00e4len und in leichtem Salzwasser mit etwas Zucker auf den Biss blanchieren. Abk\u00fchlen lassen und in St\u00fccke zerteilen.<br \/>\nBraunen Zucker in hei\u00dfer Pfanne leicht karamellisieren lassen, Spargel und Petersilie zugeben. Egerlinge mit unterheben, etwas Oliven\u00f6l und Spargelfond zugeben, durchschwenken und mit Chilisalz und Pfeffer w\u00fcrzen. Etwas Essig zugeben und einziehen lassen.<br \/>\nSaiblingsfilet in hei\u00dfem Oliven\u00f6l beidseitig kurz braten, mit Zitronensaft abl\u00f6schen, Petersilie zugeben und leicht marinieren lassen. Spargel-Egerlingsalat in einem tiefen Teller anrichten, Saiblingsfilet schr\u00e4g halbieren und darauf anrichten.
