Sahne<br \/>\n150 Gramm \u00a0R\u00e4ucherlachs<br \/>\n10 Gramm \u00a0Butter<br \/>\n60 Gramm \u00a0Frischk\u00e4se<br \/>\n20 Gramm \u00a0Ricotta<br \/>\n1 TL Meerrettich<br \/>\n1 EL Gehackten Dill<br \/>\n1 Sch\u00e4lchen Rettichkresse<br \/>\nChilisalz<br \/>\nPfeffer<\/p>\n<p><strong>Zubereitung<\/strong><br \/>\nLachs auf Klarsichtfolie auflegen, Ricotta mit Frischk\u00e4se, Meerrettich und Dill vermengen, mit Chilisalz w\u00fcrzen. Auf dem Lachs verstreichen, zusammenrollen (Achtung: Folie nicht mit einrollen!) und kurz in den Froster geben. Den wei\u00dfen Spargel von oben nach unten sch\u00e4len, den gr\u00fcnen Spargel von der Mitte nach unten sch\u00e4len und beide in leichtem Salzwasser mit einer Prise Zucker und einer Butterflocke auf den Biss kochen und abk\u00fchlen lassen. Spitzen im oberen Drittel abschneiden, l\u00e4ngs halbieren und in dem Spargelwasser warm halten. Der restliche<br \/>\nSpargel wird nicht mehr verwendet und kann als Salat oder gebundenes Gem\u00fcse sp\u00e4ter gegessen werden.<br \/>\nKartoffeln sch\u00e4len, in W\u00fcrfel schneiden und mit circa 600 Milliliter des Spargelwassers weich kochen. Den B\u00e4rlauch klein schneiden und zugeben, mit dem Mixstab fein p\u00fcrieren. Aufkochen, Sahne zugeben und kurz aufmixen, mit Salz und Pfeffer w\u00fcrzen. Suppe in einem tiefen Teller anrichten, die Spargelspitzen, f\u00e4cherartig darauf verteilen. Die Lachsrolle in Scheiben schneiden und dar\u00fcber verteilen.
