Limettenzesten schneiden und auspressen. Kaktusbl\u00e4tter und Paprika in feine Streifen schneiden. Zwiebel in d\u00fcnne Ringe schneiden. K\u00e4se fein w\u00fcrfeln. Tomaten w\u00fcrfeln. Knoblauch und Zwiebel fein w\u00fcrfeln. Limette auspressen. Koriander fein hacken. \u00d6l in einer Pfanne erhitzen. Lachssteak salzen und pfeffern und anschlie\u00dfend f\u00fcr zwei bis drei Minuten von jeder Seite braten. \u00d6l in einer Sauteuse (Stielkasserolle) erhitzen und Zwiebeln darin glasig anschwitzen. Limettensaft, Zesten und Fischfond zuf\u00fcgen und um die H\u00e4lfte reduzieren. Chilis und Sahne zugeben. F\u00fcr circa f\u00fcnf Minuten leise k\u00f6cheln lassen. Tequila einr\u00fchren. Mit Salz und Pfeffer abschmecken. Nach Bedarf andicken. Wei\u00dfweinessig und \u00d6l mischen. Mit Salz, Pfeffer und Zitrone abschmecken. Kaktusbl\u00e4tter, Zwiebelringe, Paprikastreifen und Tomaten in eine Salatsch\u00fcssel geben. Mit der Vinaigrette mischen. K\u00e4se \u00fcber den Salat streuen und zum Schluss den getrockneten Oregano dar\u00fcber verteilen. \u00d6l erhitzen und Knoblauch und Zwiebel darin anglasieren. Reis zugeben und kurz mit anbraten. Br\u00fche angie\u00dfen und alles einmal aufkochen lassen. Anschlie\u00dfend Hitze reduzieren, so dass der Reis nur noch leicht k\u00f6chelt. Topf mit einem Deckel versehen und Fl\u00fcssigkeit vollst\u00e4ndig einkochen lassen. Limettensaft zugeben und mit Koriander bestreut servieren. Lachssteak auf einen Teller platzieren. Sauce angie\u00dfen. Reiskugeln mit einem Eisportionierer herstellen und anlegen. Salat separat auf einem kleinen Teller anrichten und dazu reichen. Bei Bedarf kann noch in Streifen geschnittene Avocado und &#8211; oder frittierte Kartoffelst\u00fccke erg\u00e4nzt werden. <\/p>\n<p>Quelle:
