Die Eier nacheinander unterr\u00fchren, Mandeln, Vanillezucker und die in St\u00fccke geschnittene Zitronenschale zugeben. Langsam Mehl unterkneten bis der Teig geschmeidig ist. Fingerdick auf ein bemehltes Backblech streichen und auf der mittleren Schiene im vorgeheizten Ofen bei 200 Grad 25-30 Minuten hellbraun backen. Nach 10 Minuten Backzeit restlichen Zucker auf den Kuchen streuen. Mit Pflaumenmus oder Johannisbeergelee bestreichen.
