Zwiebel, gehackt <br \/>\n20 g Mehl<br \/>\n1 EL Senfmehl<br \/>\n1\/8 l hei\u00dfe Fleischbr\u00fche <br \/>\n1\/8 l trockenen Wei\u00dfwein<br \/>\n1\/8 l Sahne<br \/>\n1 TL mittelscharfer Senf <br \/>\nSalz<br \/>\ngemahlener wei\u00dfer Pfeffer <br \/>\n1 EL Schnittlauchr\u00f6llchen<\/p>\n<p>\n<b>Zubereitung: <\/b><br \/>Die Rumpsteaks mit K\u00fcchenpapier etwas abtupfen und die Fettr\u00e4nder mit einem scharfen Messer in Abst\u00e4nden einschneiden. Die Pfefferk\u00f6rner mit einer Gabel etwas zerdr\u00fccken und die Fleischscheiben damit einmassieren. \u00d6l und Butter in einer schweren Pfanne erhitzen und die Fleischscheiben darin von beiden Seiten pro Seite 2-3 Minuten braten. Dann mit etwas Salz bestreuen. Den Wodka erw\u00e4rmen, \u00fcber das Fleisch gie\u00dfen und anz\u00fcnden. Sobald die Flamme erloschen ist, die Steaks auf eine vorgew\u00e4rmte Platte geben und warmhalten. In den Bratensaft die Butter einr\u00fchren, erhitzen und die Zwiebelw\u00fcrfel darin glasig d\u00fcnsten. Das Mehl dar\u00fcber st\u00e4uben und mit dem Schneebesen r\u00fchren, bis das Mehl hellbraun ist. Dann das Senfmehl zuf\u00fcgen sowie die Fleischbr\u00fche und den Wein. Alles miteinander gut verr\u00fchren und aufkochen lassen.
