Im erhitzten \u00d6l rundum 10 Minuten anbraten. Mit Br\u00fche und Rotwein aufgie\u00dfen. Im vorgeheizten Backofen bei 220 Grad ca. 70 Minuten schmoren. Kurz vor Ende der Garzeit die Bananen sch\u00e4len, l\u00e4ngs halbieren und mit den abgetropften Ananasringen in der erhitzten Butter braten. Die Birnenh\u00e4lften im Wein erhitzen. Den Braten herausnehmen und warm stellen. Die Sahne mit der Speisest\u00e4rke verquirlen und die Sauce damit binden. Mit Johannisbeergelee, Senf, Orangenschale, Salz, Pfeffer und Paprika abschmecken. Den Braten in Scheiben schneiden und mit Bananen, Ananas und den mit den Preiselbeeren gef\u00fcllten Birnenh\u00e4lften auf einer vorgew\u00e4rmten Platte anrichten.
