Die \u00c4pfel sch\u00e4len, entkernen, in Spalten schneiden und sofort in den Zitronensud geben. Wieder aufkochen, die \u00c4pfel zugedeckt etwa 2 Minuten k\u00f6cheln lassen. Ausk\u00fchlen lassen. F\u00fcr den Teig die Butter und den Zucker schaumig r\u00fchren. Eier und Zitronenschale, zuletzt das Mehl unterr\u00fchren. Den Backofen auf 175\u00b0C vorheizen. Eine 24 cm gro\u00dfe Springform fetten und mit Semmelbr\u00f6seln ausstreuen. Die H\u00e4lfte des Teiges in der Form glattstreichen. Die \u00c4pfel gut abtropfen lassen, ohne die Zimtstange auf dem Teig verteilen, den restlichen Teig dar\u00fcberstreichen. Den Kuchen auf der untersten Schiene im Ofen etwa 40 Minuten backen.
