Den Kopf in R\u00f6schen teilen, waschen und abtropfen lassen. Den Brokkoli waschen und abtropfen lassen. Bl\u00e4tter entfernen. Die R\u00f6schen vom dicken Strunk trennen, die Stiele etwas k\u00fcrzen, kreuzweise einschneiden und nur die Stiele sch\u00e4len. Die M\u00f6hren putzen und fein w\u00fcrfeln. Schinken in Streifen schneiden.  Salzwasser in einem gro\u00dfen Topf erhitzen und Blumenkohl- und Brokkolir\u00f6schen bi\u00dffest garen. Abgie\u00dfen und abtropfen lassen. M\u00f6hren halb mit Wasser bedecken, zum Kochen bringen. Bei schwacher Hitze im geschlossenen Topf etwa 10 Minuten garen.  Den Ofen auf 200\u00b0C vorheizen. Die Butter in einem Topf zerlassen, das Mehl zugeben und hell anbraten. Mit Sahne und Milch aufgie\u00dfen, st\u00e4ndig r\u00fchren und 3-4 Minuten k\u00f6cheln lassen. Den K\u00e4se unterr\u00fchren. W\u00fcrzen und 2-3 Minuten k\u00f6cheln lassen. Das Gem\u00fcse in einer Auflaufform mischen, mit dem Schinken bestreuen und mit der K\u00e4sesauce \u00fcbergie\u00dfen.
