Die Eier trennen und die Eiwei\u00dfe mit dem Salz steif schlagen. Butter, Zucker und Vanillezucker schaumig r\u00fchren. Die Eigelbe nacheinander zugeben und alles zusammen schaumig r\u00fchren. Den Ofen auf 180\u00b0C vorheizen. Die Haseln\u00fcsse mit dem Mehl, der Schokolade, der Speisest\u00e4rke, dem Back- und dem Puddingpulver vermengen und die Mischung e\u00dfl\u00f6ffelweise mit dem Rum unter die Schaummasse ziehen. Den Eischnee vorsichtig unterheben. Eine Napfkuchenform gut buttern und mit Semmelbr\u00f6seln ausstreuen. Den Teig einf\u00fcllen und glatt streichen. Im hei\u00dfen Ofen (Gas 3; Umluft 160\u00b0C) etwa 1 Stunde backen.<br \/>\nDen hei\u00dfen Kuchen auf ein Gitter st\u00fcrzen und mindestens 6 Stunden, besser aber noch \u00fcber Nacht, abk\u00fchlen lassen.
